  • 2 cups flour (spelt, white, or oat)
  • 3/4 cup sugar
  • 1 cup milk (of choice)
  • 3 1/2 tbsp oil (or applesauce)
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 tsp pure vanilla extract

  2. In a mixing bowl, combine flour, baking powder, salt, baking soda, cinnamon, and sugar.
  3. In another bowl, mix milk, oil (or applesauce), and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in diced apples until evenly distributed.
  6. Pour the batter into a greased 9×5 inch loaf pan and bake for about 50 minutes or until a toothpick comes out mostly clean.
  7. Let cool before slicing.
