  • ½ teaspoon salt
  • ¾ cup unsalted butter (melted and room temperature)
  • ¼ cup sour cream or Greek yogurt (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat the oven to 400°F and prepare a muffin tin with paper liners.
  2. In a medium bowl, mix together flour, brown sugar, granulated sugar, and cinnamon for the crumble. Stir in melted butter until clumps form; set aside.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon for the muffin batter.
  4. In a large bowl, beat brown sugar, granulated sugar, and room temperature butter using an electric mixer until fluffy. Add eggs, sour cream/yogurt, and vanilla; mix until combined.
  5. Gradually incorporate half of the dry ingredients into the wet mixture. Add milk and mix well before folding in the remaining dry ingredients and diced apples.
  6. Fill muffin cups three-quarters full with batter and top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Allow cooling briefly before transferring to a wire rack.
