  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 450 g granulated sugar (divided)
  • 4 egg yolks
  • 600 ml milk (whole or lactose-free)
  • 1 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat oven to 180°C (350°F). Peel and slice apples thinly; mix with 150 g sugar and salt. Let sit for 15 minutes.
  2. Bake apple mixture in a dish for 30-40 minutes until tender; cool slightly.
  3. Heat milk with remaining sugar until simmering. Whisk egg yolks and cornstarch in another bowl. Gradually add hot milk to temper eggs, then return to saucepan and cook until thickened.
  4. Layer half of the baked apples in a dish, followed by half of the custard. Repeat layering and chill for at least one hour before serving.
