  • 1 3/4 cups flour (sifted)
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • 8 oz cream cheese (softened)
  • 1 cup butter (softened)
  • 1 jar quality apricot preserves

Instructions

  1. Prepare the Dough: Cream the butter and cream cheese together using an electric mixer until smooth. In a separate bowl, sift together the flour and salt, then mix in the lemon zest. Gradually add the dry ingredients to the wet mixture until well combined. Shape the dough into a ball and refrigerate for 30 minutes.
  2. Roll Out the Dough: Cut the chilled dough into three pieces. On a floured surface, roll each piece to about 1/8 to 1/4 inch thick and cut into 3-inch squares.
  3. Add Filling: Place 1 teaspoon of apricot preserves in the center of each square. Brush edges with egg whites, fold corners over the filling, seal gently, brush tops with egg whites, and sprinkle with sugar.
  4. Bake: Arrange on an ungreased cookie sheet and bake at 350°F (175°C) for about 25 minutes or until lightly browned. Cool on a rack before serving.
