  • 1 ripe avocado
  • 2 eggs
  • 1 tablespoon milk (optional)

  • 1 teaspoon matcha powder
  • ½ cup hot water (not boiling)
  • ½ cup cold milk (dairy or plant-based)
  • Ice cubes

Instructions

  1. Toast the bread until golden brown. Fan sliced avocado over the toast and sprinkle with salt and black pepper.
  2. In a mixing bowl, whisk together eggs and milk with a pinch of salt. Heat butter in a nonstick skillet over medium-low heat, pour in the egg mixture, and cook slowly while stirring until soft and creamy. Season with pepper before removing from heat.
  3. Whisk matcha powder with hot water until frothy. Fill a glass with ice cubes, pour cold milk over it, then add the whisked matcha mixture. Sweeten if desired.
