  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 200C (390F).
  2. Wash and cube potatoes; par-boil in salted water for 6-8 minutes.
  3. Drain potatoes and toss with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Roast for 30-40 minutes until golden brown but slightly undercooked.
  5. Add feta cheese and squeezed lemon juice; return to oven for another 15 minutes.
  6. Squeeze garlic from skins into potatoes; mix well with remaining lemon juice and honey.
  7. Garnish with fresh basil before serving.
