  • 2 large baking potatoes
  • 1 head of garlic (top cut off)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes. Par-boil in a saucepan for 6-8 minutes, then drain.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes; stir well.
  4. Roast for 30–40 minutes until golden and crispy.
  5. Add feta in the center of the dish and squeeze half a lemon juice over it.
  6. Remove garlic after roasting; mash its softened contents into a bowl.
  7. Return to the oven for another 15 minutes.
  8. Mix mashed garlic with remaining lemon juice into the potatoes before serving.
  9. Drizzle honey over the dish and top with fresh basil.
