Ingredients

Scale
  • 1 1/2 lbs zucchini (about 3 medium zucchinis), cut into wedges
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried herbs (thyme, oregano, basil, or rosemary)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Kosher salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or aluminum foil and lightly spray it with non-stick cooking spray.
  2. In a mixing bowl, combine grated Parmesan cheese with dried herbs, smoked paprika, garlic powder, salt, and pepper. Mix well.
  3. Toss the zucchini wedges in olive oil until coated evenly. Roll each piece in the Parmesan mixture to cover all sides thoroughly. Place them on the prepared baking sheet in a single layer.
  4. Bake for approximately 15 minutes until crisp. For extra color, broil for an additional 2-3 minutes. Garnish with fresh parsley before serving warm.
