  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper
  • Additional salt to taste

Instructions

  1. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer or food processor.
  2. Layer the slices in a colander, sprinkling lightly with salt between layers. Let drain for one hour.
  3. Preheat the oven to 225°F (107°C) and line two baking sheets with parchment paper.
  4. Pat the zucchini slices dry with tea towels.
  5. Arrange the slices on baking sheets without overlapping and spray lightly with avocado oil.
  6. Mix smoked paprika, ground pepper, and remaining salt; sprinkle over the zucchini.
  7. Bake for 70 to 90 minutes until golden brown and crisp, rotating sheets halfway through.
  8. Enjoy immediately or store leftovers in an airtight container.
