  • 200g beef sirloin or tenderloin, cut into cubes
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup snow peas
  • 1 onion, chopped
  • 1 tbsp soy sauce
  • 1 tsp garlic, minced
  • 1 tsp vegetable oil
  • Salt & pepper to taste
  • 1 cup cooked rice (preferably day-old)
  • 1 cup corn kernels
  • 1 egg, lightly beaten

Instructions

  1. Season beef with salt and pepper. Heat vegetable oil in a wok over high heat. Sear beef for 2-3 minutes until browned; set aside.
  2. In the same pan, add garlic and onion; sauté until fragrant. Add broccoli, carrots, and snow peas; stir-fry for about 4 minutes until vegetables are crisp-tender. Drizzle with soy sauce.
  3. In another pan, heat vegetable oil over medium heat. Add diced carrots and corn; stir-fry for 2 minutes. Push to one side and scramble the egg on the other side. Combine with vegetables and add rice along with soy sauce; stir-fry for another 3 minutes.
  4. Plate fried rice on one side of the dish; arrange stir-fried beef and vegetables on the other side before serving hot.
