  • ¾ English cucumber (peeled, seeded, and quartered into 1" slices)
  • 5 roma tomatoes (cut into 1" pieces)
  • ¼ cup red onion (thinly sliced)
  • ½ cup kalamata olives (whole and pitted)
  • 8 ounces feta cheese (cut into ½" chunks)
  • ⅓ cup olive oil
  • 3½ tablespoons red apple vinegar
  • 2 cloves garlic (minced)
  • 1½ teaspoons dried oregano (or 1½ tablespoons fresh)
  • 1 teaspoon dried dill (or 1 tablespoon fresh)
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Wash and prepare all vegetables: cut the green bell pepper into 1-inch pieces, peel and seed the cucumber before slicing into quarters, dice the roma tomatoes into 1-inch pieces, and thinly slice the red onion.
