  • 1 avocado, thinly sliced
  • 1 cup fresh blackberries
  • 1 small red onion, thinly sliced
  • 1 cup crumbled goat cheese or feta (optional)
  • 1 cup toasted pecans or walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, fresh lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper until combined.
  2. In a large bowl or platter, layer mixed greens at the bottom.
  3. Add sliced avocado evenly over the greens followed by fresh blackberries and red onion.
