  • 2 cups blueberries (fresh or frozen)
  • 1 cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 large egg yolks

Instructions

  1. In a small saucepan over medium heat, combine 1/4 cup sugar, blueberries, and lemon juice. Bring to a boil and mash the berries until blended. Puree the mixture in a blender or food processor, then strain through a fine mesh strainer into a bowl.
  2. In another bowl, mix 1 cup heavy cream with vanilla extract using a fine mesh strainer on top.
  3. In a medium saucepan, heat whole milk, remaining heavy cream, sugar, and salt over medium heat until dissolved.
  4. Whisk egg yolks in a separate bowl. Slowly drizzle in some of the warm milk mixture while whisking continuously to temper the yolks.
  5. Return the egg mixture to the saucepan along with the blueberry puree; cook until thickened enough to coat the back of a spoon.
  6. Strain this mixture into the bowl with heavy cream. Stir well and cool down in an ice bath before chilling in the fridge for 4–6 hours or overnight.
  7. Churn according to your ice cream maker's instructions until soft-serve consistency is achieved, then freeze until solid.
