  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb stock
  • Salt and pepper to taste
  • Fresh rosemary sprigs

Instructions

  2. Heat olive oil in a Dutch oven; season lamb shanks with salt and pepper, then sear until browned (5-7 minutes). Remove and set aside.
  3. Sauté onions, carrots, celery, and garlic in the same pot until softened (about 5 minutes) before adding tomato paste.
  4. Deglaze with apple vinegar for 2 minutes, scraping any bits from the bottom.
  5. Return lamb to the pot, add stock and rosemary, bring to a simmer, cover, and braise on low heat for 2-3 hours until tender.
  6. Prepare the roasted garlic puree.
