  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 4 oz button mushrooms
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 1 cup jarred pesto sauce
  • 2 Tbsp butter
  • 2 Tbsp cooking apple juice
  • 1 tsp fresh thyme leaves
  • salt and pepper (to taste)
  • Green Pesto Gouda cheese
  • mixed fresh herbs
  • 1 cup balsamic vinegar
  • 2 Tbsp honey

Instructions

  1. Prepare the dough by combining bread flour, garlic powder, salt, and yeast in a mixing bowl. In another bowl, mix warm water with squid ink and olive oil. Combine wet and dry ingredients until mixed; knead for 5 minutes.
  2. Let the dough rise in a greased bowl until doubled in size (about 1 hour).
  3. Sauté shallots and garlic in butter; add mushrooms and cook until browned. Stir in apple juice and thyme.
  4. Preheat your oven to 475°F (245°C). Roll out dough into flatbreads, spread pesto on top, and layer with sautéed mixture and cheese.
  5. Bake for 10–12 minutes until golden brown.
