  • 1/2 cup water
  • 1 tablespoon apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries, hulled and quartered
  • 1/4 cup granulated sugar
  • 1/4 cup + 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon fine sea salt
  • 23 tablespoons Turbinado sugar (optional)

Instructions

  1. Prepare the brown butter crust by melting cold unsalted butter in a saucepan over medium heat until golden brown. Let cool slightly.
  2. In a mixing bowl, combine flour and salt. Add brown butter, water, vinegar, and whisked egg; mix until combined.
  3. Form dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. For the filling, toss together sliced peaches, quartered strawberries, sugar, cornstarch, lemon juice, and zest in a bowl until well coated.
  5. Preheat oven to 375°F (190°C). Roll out one disc of dough to fit your pie dish and fill with fruit mixture.
  6. Roll out the second disc for the top crust or create lattice strips. Bake for about 70 minutes until golden brown and bubbly.
