  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp crushed fresh coriander seeds or 1 tbsp finely chopped fresh cilantro leaves
  • Fluffy rice for serving
  • Warm naan for serving

Instructions

  1. Heat vegetable oil and butter in a large skillet over medium heat.
  2. Add chicken thighs and sauté until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same skillet, add chopped onion and sauté until translucent (4-5 minutes).
  4. Stir in minced garlic and grated ginger; cook for another minute.
  5. Add spices (ground coriander, garam masala, turmeric, chili powder) and mix well.
  6. Return chicken to skillet; coat with sauce and let simmer on low heat for about 10-15 minutes until fully cooked.
  7. Serve hot over fluffy rice with warm naan.
