  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 oz mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup baby spinach
  • 1 pound penne pasta
  • 1 cup cherry tomatoes, halved

Instructions

  1. Coat chicken with olive oil and Cajun spices. Sear in a skillet until golden brown and cooked through.
  2. In the same skillet, sauté onions and mushrooms in butter and olive oil. Sprinkle flour, then whisk in milk until thickened.
  3. Stir in heavy cream, Parmesan cheese, salt, pepper, and spinach until wilted.
  4. Cook penne pasta according to package instructions; drain.
  5. Combine pasta with creamy sauce and top with sliced chicken and halved cherry tomatoes.
