  • 12 ounces Rigatoni
  • 1 1/22 cups diced heirloom tomatoes
  • 1 cup mozzarella balls
  • 1/4 cup chiffonaded basil
  • 1/2 cup olive oil
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. In a small bowl, mix olive oil, parsley, garlic powder, red pepper flakes, oregano, black pepper, and salt. Set aside.
  2. Boil water in a large pot and cook Rigatoni according to package directions until al dente. Drain using a colander.
  3. Toss warm pasta with the seasoned olive oil mixture and let cool at room temperature.
  4. Dice heirloom tomatoes and chiffonade basil.
  5. Once pasta is cool, combine with mozzarella balls, diced tomatoes, and basil. Stir gently until mixed.
  6. Serve immediately or chill briefly before serving.
