  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean, pierce them several times with a fork, and rub them with olive oil. Season with salt and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes until tender.
  4. While baking, cook the ground beef in a skillet over medium heat until browned. Drain excess fat and stir in taco seasoning according to package instructions.
  5. Once the potatoes are done, cut a slit in each and fill generously with seasoned beef and shredded cheese.
