  • 1 cup European-style unsalted butter, browned and cool
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract, optional
  • 1/2 cup granulated sugar
  • 1/2 tsp pumpkin or chai spice blend

Instructions

  1. Prepare the brown butter: melt and cook until golden brown; let cool.
  2. Blot pumpkin puree with paper towels to remove excess moisture.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. In another bowl, mix cooled brown butter, brown sugar, and maple syrup until combined. Add egg yolk and pumpkin puree; mix well.
  5. Gradually combine dry ingredients with wet ingredients until just mixed. Cover and chill dough overnight.
  6. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  7. Scoop and roll dough balls in spiced sugar mixture; place on baking sheets.
  8. Bake for 12-14 minutes until puffed but soft in the center. Cool before serving.
