  • 1 yellow bell pepper

  1. Marinate the chicken and veggies by combining marinade ingredients in a freezer bag. Add chicken to one bag and bell peppers and onions to another. Refrigerate for at least 4 hours or overnight.
  2. Prepare the dressing by whisking together all dressing ingredients in a bowl and refrigerating until ready.
  3. Cook marinated chicken in a grill or stovetop pan until fully cooked. In the last few minutes, add marinated peppers and onions to slightly char them.
  4. Assemble your salad by layering chopped romaine lettuce as the base, topping with tomatoes, avocado, cooked chicken strips, and veggies. Drizzle with dressing before serving.
