  • 4 ounces fresh mushrooms
  • 1 medium zucchini
  • 2 cups shredded Italian cheese blend
  • 1/2 cup sour cream
  • 2 green onions
  • 2 eggs (beaten)
  • 2 tablespoons butter
  • Dried basil
  • Salt and fresh ground black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the chicken into bite-sized pieces. Slice zucchini, mushrooms, and green onions.
  3. In a large frying pan, melt butter over medium heat. Add chicken, zucchini, mushrooms, salt, and pepper; cook until tender (about 5 minutes) then drain.
  4. In a mixing bowl, combine shredded cheese, sour cream, green onions, beaten eggs, dried basil, salt, and pepper; mix well.
  5. Stir in the cooked chicken mixture until well coated.
  6. Spray two individual baking dishes with non-stick spray and pour the mixture evenly into both.
  7. Bake for 30-35 minutes until golden brown.
  8. Allow cooling for about 5 minutes before serving.
