  • 1 lb boneless chicken thigh, cut into bite-sized pieces
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves garlic, smashed
  • 1 medium zucchini, sliced
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce

Instructions

  1. In a mixing bowl, combine the chicken, cornstarch, soy sauce, sesame oil, sugar, vinegar, and garlic. Marinate for about 30 minutes.
  2. Heat oil in a wok or large frying pan over medium-high heat until shimmering.
  3. Add the marinated chicken and smashed garlic to the pan. Stir fry for about 2 minutes until the chicken is opaque; then transfer to a plate.
  4. In the same pan, add zucchini and stir fry for roughly 5 minutes until tender.
  5. Return the chicken to the pan with zucchini, add oyster sauce, and stir fry everything together for another 2-3 minutes.
  6. Serve hot over rice or noodles.
