  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Combine dry ingredients with wet ingredients gently, then fold in shredded zucchini and 3/4 cup chocolate chips.
  5. Pour into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick comes out mostly clean.
  7. Allow to cool for 15 minutes in the pan before transferring to a wire rack.
