  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 4 tablespoons cilantro (finely chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon red chili flakes
  • Salt to taste
  • Lime wedges for garnish
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). In a mixing bowl, whisk together olive oil, garlic, cilantro, lime juice, red chili flakes, and salt.
  2. Add chicken thighs to the marinade, coating them well. Let marinate for at least 15 minutes (up to 2 hours for more flavor).
  3. Heat a skillet over medium heat and pan-fry the chicken skin-side down until slightly browned. Flip and brown the other side.
  4. Spoon the remaining marinade over the chicken and transfer the skillet to the preheated oven. Bake for about 20 minutes or until fully cooked.
