  • 2 1/2 cups All-Purpose Flour
  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon to make the filling.
  3. Combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt in a large bowl.
  4. Cream cold butter and granulated sugar using a stand mixer until fluffy; add eggs and vanilla extract.
  5. Gradually mix dry ingredients into the wet mixture until combined.
  6. Shape the dough into a rectangle and spread the cinnamon filling evenly on top.
  7. Roll up tightly from one edge and cut into 10–12 pieces.
  8. Bake for 9–11 minutes or until edges are golden brown.
  9. Cool before frosting with a mixture of cream cheese and butter.
