  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

  1. Heat coconut oil in a heavy pot over medium heat. Add finely chopped onion and sauté until translucent.
  2. Stir in minced garlic and grated ginger; cook for about 1-2 minutes until fragrant.
  3. Increase heat to medium-high and add beef chunks, browning on all sides for about 5-7 minutes.
  4. Sprinkle curry powder, turmeric, coriander, and chili flakes (if using) over the beef and mix well.
  5. Stir in tomato paste and combine thoroughly before adding the full can of coconut milk.
  6. Bring to a simmer, then reduce heat to low, cover the pot, and let it simmer for about 2-3 hours or until the beef is fork-tender.
