  • 1.5 lbs beef chuck, cut into 1.5-inch cubes
  • Salt & freshly ground black pepper
  • 2 tbsp vegetable oil
  • 1 large yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 1 tsp ground turmeric
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • 1 tbsp brown sugar
  • Juice of lime
  • 1 cup jasmine rice
  • 4 garlic naan, warmed or lightly charred
  • Chopped cilantro or Thai basil, for garnish

Instructions

  1. Prepare all ingredients: cut beef into cubes, slice onion, mince garlic, and grate ginger.
  2. Heat vegetable oil in a Dutch oven over medium-high heat. Season beef with salt and pepper; sear until browned on all sides. Remove from pot.
  3. In the same pot, sauté onions until translucent, then add garlic and ginger until fragrant.
  4. Stir in curry paste and turmeric; pour in coconut milk, broth, brown sugar, and lime juice. Mix well.
  5. Return beef to the pot; simmer covered on low heat for 2-3 hours until tender.
  6. Cook jasmine rice according to package instructions.
  7. Serve braised beef over jasmine rice with warmed garlic naan on the side.
