  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • 3 egg yolks
  • Gooey cocoa spread
  • 2 vegan gelatin sheets (4g)

Instructions

  1. Prepare the coconut mousse by whipping heavy cream and mascarpone in a chilled bowl. Gradually mix in powdered sugar until soft peaks form.
  2. Soak vegan gelatin sheets in cold water, then dissolve in warm coconut milk. Let cool before folding into the whipped cream.
  3. Fill hemisphere molds halfway with mousse; add cocoa spread and top with more mousse. Freeze for at least 6 hours.
  4. Create the cocoa Breton shortbread dough by mixing all dry ingredients with butter and egg yolks until well combined. Chill for 30 minutes.
  5. Roll out the dough, cut into circles, and bake at 180°C (356°F) for about 10 minutes or until firm.
  6. Assemble by placing mousse domes on cooled shortbread bases and garnish with grated coconut.
