Ingredients

  • 1 cup broccoli florets
  • 1 zucchini, sliced
  • 1 cup cauliflower florets
  • 1 medium carrot, sliced into rounds
  • 1 handful kale or spinach, chopped
  • 1 tbsp olive oil
  • 1 garlic clove, minced (optional)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large skillet or wok over medium heat. If using garlic, add it now and sauté until fragrant (about 30 seconds).
  2. Add broccoli, cauliflower, carrots, and zucchini to the pan. Stir frequently for 5-6 minutes until they begin to soften while retaining some crunch.
  3. Add chopped kale and a splash of water. Cover with a lid and steam for an additional 2-3 minutes until all veggies are tender yet vibrant. Season with salt and pepper to taste.
  4. Serve hot as a side dish or enjoy on its own.
