  • 8 large egg whites
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream or topping
  • Chopped Oreo cookies for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. Beat softened butter and sugar until light and fluffy. Mix in the vanilla.
  3. Combine flour, baking powder, and salt in another bowl. Alternately mix dry ingredients with milk into the butter mixture until smooth.
  4. Whisk egg whites until soft peaks form; fold gently into batter along with chopped Oreo cookies.
  5. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool before transferring to a rack.
  6. Assemble by layering one cake on a platter, spreading ice cream on top, placing the second layer of cake, then frosting with whipped cream and garnishing with chopped cookies.
