  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 1½ cups fresh or thawed frozen corn
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • ⅓ cup crumbled feta cheese (optional)
  • 2 tablespoons Italian dressing (optional)

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt. Set aside.
  2. Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add corn and cook until tender, about 5 minutes.
  3. Pour the cooked corn into a large mixing bowl and let it cool slightly.
  4. Add cherry tomatoes, cucumber, and basil to the bowl. Stir gently to combine.
  5. Refrigerate the salad until ready to serve. Just before serving, drizzle with the prepared dressing and sprinkle with feta cheese if desired.
