  • 15 ounce can black-eyed peas (rinsed and drained)
  • 15 ounce can black beans (rinsed and drained)
  • 1 cup frozen sweet corn (thawed)
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup olive oil
  • 2 tablespoons granulated sugar
  • 1/3 cup white vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • Chopped parsley for topping

Instructions

  1. In a large mixing bowl, combine the diced tomatoes, black-eyed peas, black beans, sweet corn, red onion, green bell pepper, and red bell pepper.
  2. In a separate bowl, whisk together olive oil, white vinegar, sugar, chili powder, and salt. Pour over the bean mixture.
  3. Toss everything gently to coat. Cover and refrigerate for 3-4 hours to allow flavors to meld before serving.
