  • 1 teaspoon pumpkin pie spice

  • 1 cup all-purpose flour
  • 4 ounces cream cheese
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a bowl, combine the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla, and spices. Whisk until smooth.
  3. Gently fold in flour, baking powder, baking soda, and salt until just combined.
  4. Pour two-thirds of the batter into the prepared loaf pan.
  5. In another bowl, mix together softened cream cheese, additional sugar, and flour until smooth. Spread over the batter in the pan.
  6. Top with remaining pumpkin batter and smooth gently.
  7. Bake for about 48 minutes or until golden brown and a toothpick comes out clean. Cool before slicing.
