  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 2 tbsp tomato paste
  • Olive oil
  • Italian herbs
  • Salt
  • Pepper

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Shape into meatballs.
  2. Heat olive oil in a skillet over medium heat; sear meatballs until golden brown and set aside.
  3. In the same skillet, sauté onion and bell peppers until softened.
  4. Stir in smoked paprika, chicken stock, heavy cream, tomato paste, salt, and pepper. Bring to a simmer.
  5. Return meatballs to the skillet; cover and cook for 10–12 minutes until cooked through.
  6. Serve garnished with fresh parsley.
