- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic, finely chopped
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup chicken stock
- ½ cup heavy cream
- 2 tbsp tomato paste
- Olive oil
- Italian herbs
- Salt
- Pepper
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Shape into meatballs.
- Heat olive oil in a skillet over medium heat; sear meatballs until golden brown and set aside.
- In the same skillet, sauté onion and bell peppers until softened.
- Stir in smoked paprika, chicken stock, heavy cream, tomato paste, salt, and pepper. Bring to a simmer.
- Return meatballs to the skillet; cover and cook for 10–12 minutes until cooked through.
- Serve garnished with fresh parsley.
