  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 12 oz rotini or fusilli pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve some pasta water, drain, and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun seasoning until golden brown. Remove from skillet.
  3. In the same skillet, melt butter and cook minced garlic until fragrant. Stir in heavy cream and milk; simmer gently before adding Velveeta cheese until melted.
  4. Mix in cheddar cheese until creamy. Adjust thickness with reserved pasta water if necessary.
  5. Toss cooked pasta into the sauce and combine well before serving with the seared chicken on top.
