  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups water
  • 1 cup green beans, trimmed

Instructions

  1. Rinse the rice under cold water, then combine with 2 cups of water in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Fluff with a fork.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add chicken broth and bring to a simmer. Stir in heavy cream along with chopped herbs and cook for 5 minutes until thickened.
  4. Return the chicken to the skillet to simmer in the sauce for an additional 5 minutes. Steam or blanch green beans until bright green and tender-crisp.
  5. Serve the creamy herb chicken over fluffy rice with green beans on the side.
