  • 300g boneless chicken breast
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper
  • 1 tbsp butter
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp sweet paprika
  • 150ml chicken broth
  • 150ml heavy cream
  • 1 tbsp tomato paste
  • 1 cup basmati rice
  • 2 cups water
  • Pinch of salt
  • Fresh parsley, chopped

Instructions

  1. Cook basmati rice in salted water according to package instructions until fluffy. Set aside.
  2. Season chicken pieces with smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium heat and brown the chicken until cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté onion, red bell pepper, and garlic until softened.
  4. Stir in smoked paprika and tomato paste; cook for about one minute.
  5. Pour in chicken broth and let simmer for 3-4 minutes.
  6. Reduce heat to low, add heavy cream, return chicken to the skillet, and simmer until the sauce thickens slightly.
  7. Serve hot over fluffy rice.
