  • 2 pounds zucchini, sliced
  • Salt
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup sour cream
  • Italian seasoning
  • Onion powder
  • Black pepper
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 425°F.
  2. Butter a baking dish; set aside.
  3. Sprinkle salt on zucchini slices and let rest for 15 minutes to draw out moisture.
  4. Wipe off excess moisture from zucchini.
  5. Arrange zucchini slices in the prepared baking dish.
  6. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese.
  7. Melt butter in a saucepan over medium heat; sauté garlic until fragrant.
  8. Add the cream mixture to the saucepan with garlic; whisk until bubbling.
  9. Stir in half of the mozzarella cheese until melted.
  10. Pour sauce over zucchini slices; sprinkle remaining cheeses on top.
  11. Bake for 18-22 minutes until golden brown.
  12. Let stand for 5-10 minutes before serving.
