  • 16 oz rotini pasta
  • 32 oz Velveeta cheese
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • Chopped chives for garnish

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter. Add the chicken pieces with minced garlic and seasonings. Sear until golden brown (6-8 minutes). Remove from skillet.
  2. In the same skillet, add the remaining butter, rotini pasta, and chicken broth. Bring to a boil; reduce heat and simmer until pasta absorbs most broth (12-15 minutes).
  3. Lower heat; stir in cubed Velveeta and heavy cream until fully melted into a smooth sauce.
  4. Return the seared chicken to the skillet; mix gently. Add shredded cheddar cheese until melted and season with salt as desired.
  5. Serve hot, garnished with chopped chives if desired.
