  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup diced sweet onion
  • 1 ½ tablespoons minced garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoons fresh basil, chopped and divided
  • 4 tablespoons fresh oregano, chopped and divided
  • 4 tablespoons fresh mint, chopped and divided
  • 1 cup heavy cream
  • ¾ cup grated Romano cheese
  • Pinch red pepper flakes
  • 12 ounces your favorite dry pasta

Instructions

  1. Cook your favorite dry pasta according to package directions; reserve one cup of pasta water before draining.
  2. Cut zucchini in half lengthwise, remove seeds, then shred using a box grater or food processor.
  3. In a large skillet over medium-high heat, add olive oil and sauté diced onions until translucent (about three minutes).
  4. Add red pepper flakes and minced garlic; cook for one minute.
  5. Stir in shredded zucchini, salt, pepper, and half of each herb. Cover and cook on medium-low heat for 15 minutes.
  6. Remove cover, stir in heavy cream and remaining herbs. Add grated Romano cheese; adjust thickness with reserved pasta water if needed.
