  • 4 toasted croissants
  • 45 boneless, skinless chicken thighs
  • 3 cups chopped romaine lettuce
  • ½ cup shaved Parmesan cheese
  • Canola oil (for frying)
  • 1 large egg
  • 2 tbsp flour
  • 3 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic, minced or paste
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup olive oil
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Marinate chicken thighs in a mixture of egg, flour, cornstarch, soy sauce, sesame oil, garlic, onion powder, salt, and pepper for at least 20 minutes.
  2. Toast panko breadcrumbs in melted butter over medium-low heat until golden brown; set aside.
  3. Blend together dressing ingredients: egg, olive oil, Parmesan cheese, lemon juice, anchovies, garlic, Dijon mustard, vinegar, Worcestershire sauce, and pepper until smooth.
  4. Heat canola oil to 350°F (175°C) and fry marinated chicken until golden brown (8-10 minutes). Drain excess oil on a wire rack.
  5. Assemble sandwiches by spreading dressing on croissant halves and layering with chicken and salad mixture before topping.
