  • ½ teaspoon salt
  • 16 tablespoons cold unsalted butter (cut into small pieces)
  • 6 tablespoons very cold water
  • 3 pints fresh blueberries
  • 1 cup + 1 tablespoon sugar
  • ½ cup flour
  • Zest and juice from 2 limes

Instructions

  1. Prepare the dough: In a stand mixer, combine flour, sugar, and salt. Add butter; mix until coarse crumbs form. Slowly add cold water until dough comes together.
  2. Chill: Shape dough into a ball, wrap in plastic wrap, and refrigerate for at least one hour.
  3. Preheat oven: Set to 375°F (190°C).
  4. Roll out dough: Divide chilled dough, roll out two halves for top and bottom crusts.
  5. Make the filling: Combine blueberries with sugar, flour, lime zest, and juice in a bowl.
  6. Assemble & bake: Fill bottom crust with blueberry mixture, cover with top crust, seal edges, cut vents, brush with egg wash, sprinkle with sugar, and bake for one hour.
