  • 2.2 pounds fresh or frozen peaches
  • 3⅓ cups sugar
  • Juice of 1 lemon (plus lemon halves)

Instructions

  1. Rinse the peaches under cold water, pat dry, halve them, remove the pits, and peel off the skin.
  2. Measure 2.2 pounds of prepared peaches.
  3. In a large jam pan, combine peeled peaches with sugar, lemon juice, and the squeezed lemon halves.
  4. Stir well and bring to a rolling boil over medium heat before reducing to low and simmering for 40–50 minutes until glossy.
  5. Remove lemon halves and blend to desired consistency using a hand blender; continue simmering until set.
  6. Jar the hot peach jam after adding a drop of alcohol-free vanilla extract into each lid.
  7. Store jars upside down for a few hours before keeping them in a cool place.
