  • 3 pounds fresh strawberries, hulled
  • 1/2 cup water
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons strawberry vegan gelatin
  • 2 teaspoons lemon juice

Instructions

  1. Prepare the strawberries by hulling and washing them. Set aside whole berries for topping.
  2. In a saucepan over medium heat, combine water, sugar, cornstarch, and salt. Stir until thickened (about 5 minutes). Remove from heat and add strawberry vegan gelatin and lemon juice; mix well.
  3. Place the pie crust in a dish, layer half of the hulled strawberries, pour half of the glaze, then layer remaining strawberries and pour on the rest of the glaze.
  4. Refrigerate for at least 4 hours until set before serving.
