  • 4 salmon fillets
  • 300g baby potatoes
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedge (for serving)

Instructions

  1. Preheat the oven to 200C (400F). Toss baby potatoes with 1 tablespoon olive oil, salt, and pepper in a mixing bowl. Spread on a baking tray and roast for 20-25 minutes until golden and tender.
  2. Season salmon fillets with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium heat and sear each fillet for about 3-4 minutes on each side until golden brown.
  3. In the same skillet, add broccoli florets and cherry tomatoes. Sauté for about 3-4 minutes until broccoli is bright green and tomatoes start to blister.
  4. Melt butter in a small pan over low heat; add minced garlic and sauté for about 1 minute until fragrant. Stir in chopped parsley.
  5. Arrange salmon fillets on plates alongside roasted baby potatoes and sautéed veggies. Drizzle generously with garlic butter and serve with lemon wedges.
