  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 300g fresh asparagus
  • 200g jasmine or long-grain rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the rice in salted water until fluffy (15-20 minutes).
  2. Heat olive oil in a pan over medium heat; add asparagus with salt and pepper and roast until tender-crisp (8-10 minutes).
  3. In a wok, heat sesame oil and sauté garlic until fragrant. Add chicken and cook until golden brown.
  4. Stir in mushrooms and red bell pepper; cook for a few more minutes.
  5. Add soy sauce, hoisin sauce, and cornstarch slurry; mix well until the sauce thickens.
  6. Serve hot over rice with roasted asparagus.
