  • Salt & freshly ground black pepper
  • 6 cloves garlic, smashed
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup chicken broth

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season lamb shoulder generously with salt and pepper.
  3. Combine smashed garlic, Dijon mustard, honey, and olive oil in a bowl to create a marinade.
  4. Rub marinade evenly over the lamb; place herbs around it in a roasting pan.
  5. Pour chicken broth into the pan without disturbing the marinade.
