  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Prepare the chicken by mixing cubed chicken breasts with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne pepper.
  2. In another bowl, combine sliced zucchini and diced sweet potato with olive oil, paprika, garlic powder, salt, and black pepper.
  3. Preheat the grill or grill pan over medium heat. Grill marinated chicken cubes and vegetables for about 2-3 minutes on each side until cooked through.
  4. Make the creamy sauce by whisking together mayonnaise, sour cream, lemon juice, minced garlic, salt, and black pepper until smooth.
